This is one of those dishes that brings up so many wonderful memories of having breakfast in India. This dish is also particularly popular as a snack and street food across South Asia and beyond. Very easy to make, quick, and filling, I love to have this for brunch at the weekends after doing a food shop as it does taste best with the freshest possible ingredients. This recipe makes two servings.

INGREDIENTS:
-Two slices of toast
-One red onion
-One red pepper
-Small handful of coriander
-Four green chillies
-Four eggs
METHOD:
-Chop all the ingredients you need to use
-Whisk two eggs, making sure to get as much air in as possible, so the eggs look a bit bubbly. The goal is to make a very light and fluffy omelette
-Shove in all the chopped ingredients and whisk a bit more
-Pour in to a pan on medium heat
-When the omelette is nearly cooked, wrap it around a slice of toast, or serve on top. If it falls apart that's fine! You will just have some really tasty scrambled egg on toast
